VEGAN GINGERBREAD BUNDT CAKE

We're Santa's little helpers, providing you with the easiest and most delicious vegan recipes to make sure your Christmas eve will be unforgettable, but shhhh, don't tell anyone! Dessert is most definitely the most important meal at your X-mas dinner, so we're kicking our Christmas series off with this gingerbread bundt cake. Trust us when we say it's an easy one, with plain ingredients and it's ideal for those who like to go overboard with the cake decorating (we won't judge, promise!).  

BAKING TIME: 40 minutes // SERVINGS: 8 to 10 slices // MEAL: dessert

INGREDIENTS

- 2,5 cups spelt flour
- 3tsp baking powder
- 1tsp baking soda
- pinch of salt
- 2tsp cinnamon
- 2tsp allspice
- 1/2tsp nutmeg
- 1 1/4 cup cane sugar
- 1/3 cup coconut oil, melted
- 1/2 cup applesauce
- 2 heaped tsp blackstrap molasses
- 1 cup water

STEP-BY-STEP 

1. Preheat the oven to 180°C or 350°F.
2. In a bowl, mix together the flour, baking powder and soda, salt, and spices.
3. In another bowl, mix together the cane sugar, oil, applesauce, molasses and water. Add the wet mixture to the dry and combine with a spatula.
4. Pour the batter into your bundt cake pan and bake for 40 minutes or until a knife comes out clean.
5. Leave to cool down in the cake pan for 10 to 15 minutes. The cake is rather fragile so be careful when taking it out of the pan.
