OVERNIGHT OATS: 3 FALL-INSPIRED RECIPES

If you've not jumped on the oat bandwagon already, your tastebuds are missing out! This fibrous grain makes you feel full for longer, promotes good bowel health (great topic at the dining table!) and it's so versatile to work with. We like ours in the morning, but also in cookies, or even as a savory dish. These recipes are semi-sweet depending on your oat variation and they're ready in less than two minutes. The three variations are totally different regarding the taste yet equally delicious and unique! Let's go(at)!

PREP TIME: 2 minutes // SERVINGS: 1 per recipe // MEAL: breakfast

CHOCOLATE COCONUT PARFAIT


INGREDIENTS

- 1/2 cup oats
- 2 heaped tsp shredded coconut
- 2 heaped tsp chocolate drops
- 3/4 cup coconut milk (not cream!)

STEP-BY-STEP

1. Mix all ingredients and leave to thicken overnight.




PECAN PUMPKIN PARFAIT


INGREDIENTS

- 1/2 cup oats
- 2tbsp chopped pecans
- 1tsp cinnamon
- 1/2tsp allspice
- 1tbsp maple syrup or other sweetener
- 1/2 cup water or plant milk
- 2tbsp pumpkin puree

STEP-BY-STEP

1. Mix all ingredients together and leave to thicken overnight.


CARROT CAKE PARFAIT


INGREDIENTS

- 1/2 cup oats
- 1tbsp maple syrup or other sweetener
- 1 small, grated carrot
- 1/2 cup water or almond milk
- 1tsp cinnamon
- 1/2tsp allspice

STEP-BY-STEP

1. Mix all ingredients and leave to soak and thicken overnight.

All parfaits can be stored in the fridge for up to four days.
