Chocolate chunk cookies are a basic human necessity, we think. Did you notice we didn't say chocolate chip cookie? That's right, move over chocolate chips, you've been upgraded. We like our cookies large, not too sweet, with a little crunch and a lot of chocolate. The chia egg adds healthy Omega 3 fatty acids and replaces eggs in your usual choc cookie, which makes our recipe worth trying out even more. If you're not convinced by now, you should bake them yourself. For sure. Needwesaymore?

INGREDIENTS
- 1 1/4 cups (spelt) flour- 1tsp baking powder
- 1/2tsp baking soda
- pinch of salt
- 1/2 cup cane sugar
- 1/4 cup chocolate chunks
- 1 chia egg (1tbsp chia seeds mixed with 3tbsp water, leave to thicken)
- 1/4 cup coconut oil
- 1/2tsp vanilla extract
- 1/4 cup water
STEP-BY-STEP
1. Preheat your oven to 180°C or 356°F.2. In a bowl, combine flour, baking powder, baking soda, and salt. In another bowl, mix together cane sugar, coconut oil, water, vanilla extract, and the chia egg. Mix well.
3. Combine dry and wet ingredients and add in the chocolate chunks.
4. Line a baking tray with baking paper or a silicone mat and scoop 1 tablespoon of the dough on the tray. This should make one large cookie. Use less dough if you prefer smaller cookies.
5. Bake 20 minutes then leave to cool down on a wire rack.
