Finding basic vegan cake recipes can be a hassle sometimes, especially when the recipe calls for alien ingredients that can only be found on Jupiter or Saturn. We kept this one basic like our Starbucks coffee and dark the way chocolate cake should be. For the chocoholics between us there's the option to add chocolate chips for that total indulgence (we not-so-secretly totally support this decision). Raise your hands if you're down for this and let's get baking!
BAKING TIME: 45 mins // SERVINGS: 8-10 slices // MEAL: dessert
INGREDIENTS
- 1,5 cups spelt flour- 1 cup cane sugar
- 1/3 cup cocoa powder
- 1tsp baking soda
- 1/2tsp salt
- 1,5tsp baking powder
- 1/3 cup coconut or sunflower oil
- 1tsp vanilla extract or sugar
- 1 cup water
- 1tbsp vinegar or lemon juice
- optional: handful chocolate drops
STEP-BY-STEP
1. Preheat your oven to 175°C. In a large bowl, mix together the flour, sugar, baking soda, cocoa powder, baking soda and powder, and salt.2. In a smaller bowl, mix together the melted coconut oil or sunflower oil, vanilla, vinegar and water.
3. Add the wet to the dry ingredients and combine well. Add the optional chocolate drops.
4. Pour the batter into a baking tin lined with baking paper, sprinkle on more chocolate drops for an extra kick, and bake 45 minutes.
5. Leave to cool down inside the tin for 10 minutes before placing it on a cooling rack.
