You could say these donuts are essentially muffins baked in a donut pan, but we like to keep it somewhat healthy here at The Kitchen Misses. Fried donuts in fats aren't exactly things we'd recommend our lovely readers, so with minimal sugar and oil, we came up with an easy peasy donut recipe. Featuring cinnamon and Speculoos biscuits, these little treats are what you need on a Friday to kick off your weekend in the right mood. We donut need to say more, do we?
BAKING TIME: 15 minutes // SERVINGS: makes 6 donuts // MEAL: dessert
INGREDIENTS
- 1 cup spelt flour- 1/2 cup cane sugar*
- 1tsp baking powder
- 1/2tsp baking soda
- 1tsp cinnamon
- 1tsp vinegar or lemon juice
- 1/4 cup coconut oil
- 1/4 cup water or almond milk
- 3 Speculoos cookies
- almond or vanilla extract
optional: 1/2tsp allspice
STEP-BY-STEP
1. Preheat the oven to 160°C/320°F.2. In a large bowl, mix together flour, baking powder, baking soda, and cinnamon. In a smaller bowl, mix together the melted coconut oil, vinegar, extract, water/milk, and sugar.
3. Add the wet to the dry ingredients and mix well. If you're adding in Speculoos, crumble the cookies and add to the mixture.
4. Divide the mixture over the greased donut pan and make sure they're only filling up 1/4th of the rings. Bake for 15 minutes and leave to cool down.
TOPPING/GLAZING
You can choose to glaze the donuts with chocolate (mix 1tbsp chocolate drops with a pinch of coconut oil and microwave until melted) or mix icing sugar with a tiny bit of water.*use 1/4 cup cane sugar if adding in speculoos biscuits
