During the hot summer days, a cold dish like this one featuring quinoa and sundried tomatoes can do wonders. This refreshing salad is a perfect light yet filling lunch and makes you feel recharged and ready to conquer the day. Also, who doesn't love some avocado in their life? In combination with some sun-dried tomatoes, we feel like this recipe is kind of irresistible. We'll call it the Mr. Grey of summer salads.

INGREDIENTS
- 1/2 cup dry quinoa- 1/4 large cucumber
- 6 sundried tomatoes
- 1/2 avocado, cubed
- 1tbsp pumpkin seeds
- 1tbsp sunflower seeds
- 1tbsp dried cranberries
- juice of 1/2 lime
STEP-BY-STEP
1. Cook the quinoa for 15 minutes, adding in 1,5 cups of water. In the meantime thinly slice the cucumber, tomatoes and avocado.2. Once the quinoa is cooked through, add in the seeds, cranberries, veggies and squeeze the lime. Mix and serve either hot or cold.
