INGREDIENTS
- 2 large carrots, diced- 1/2 cup frozen peas, thawed
- 1 large head of broccoli
- 2 cups dry whole wheat pasta
- salt and pepper to taste
STEP-BY-STEP
1. Cook the washed and chopped broccoli in a large pot until soft. In the meantime, in another pot, cook the carrots until soft. This will take about 10 minutes.2. Depending on the cooking time of your pasta you might want to add this to a pot of boiling water as well.
3. Once the broccoli is soft, drain and add to a blender along with salt and pepper. Blend until creamy.
4. Once soft and cooked, drain the carrots and the pasta. Then pour the creamy broccoli sauce over the pasta, mix together and add peas and carrots. Serve hot.
*Optional: add a squeeze of lemon to make it zestier.
