BROCCOLI PASTA WITH PEAS AND CARROTS

This broccoli pasta dish really is an easy peasy lemon squeezy one to cook up and plate. Not just because it actually does contain peas and lemon, but also because it's ready in under 15 minutes. With a simple sauce consisting of broccoli only, a whole wheat pasta and your peas and carrots this is one every family member will like. Picky eaters, beware!

COOKING TIME: 15 minutes // SERVINGS: 2 // MEAL: dinner

INGREDIENTS

- 2 large carrots, diced
- 1/2 cup frozen peas, thawed
- 1 large head of broccoli
- 2 cups dry whole wheat pasta
- salt and pepper to taste

STEP-BY-STEP

1. Cook the washed and chopped broccoli in a large pot until soft. In the meantime, in another pot, cook the carrots until soft. This will take about 10 minutes.
2. Depending on the cooking time of your pasta you might want to add this to a pot of boiling water as well.
3. Once the broccoli is soft, drain and add to a blender along with salt and pepper. Blend until creamy.
4. Once soft and cooked, drain the carrots and the pasta. Then pour the creamy broccoli sauce over the pasta, mix together and add peas and carrots. Serve hot.

*Optional: add a squeeze of lemon to make it zestier.
