THE BEST DAMN VEGAN APPLE CRUMBLE MUFFINS

Although the title of this recipe may be slightly ambitious, we're nowhere near exaggerating when it comes to the rating of these muffins. We've tasted and tried, experimented and failed, yet there's not a single human being on earth who'd say there's a better recipe than ours. With an airy, donut-like texture, the crunch of a crumble topping, and the feeling of heaven in your mouth, there's nothing that comes even close to these muffins. You're not entirely convinced? Try them yourself!

INGREDIENTS

- 1 medium-sized apple, finely chopped
- 1,5 cups spelt flour
- 1tbsp baking powder
- 1tsp baking soda
- 1/2tsp salt
- juice of half a lemon
- 1,5 cups plant milk
- 3/4 cup cane sugar
- 1tsp almond extract
- 2tsp cinnamon
- 2,5tbsp melted coconut oil
- optional: handful of raisins


STEP-BY-STEP

1. Preheat your oven to 180°C or 356°F. In a large bowl, mix together the dry ingredients. These are the spelt flour, baking powder, baking soda, salt, cane sugar, cinnamon. 
2. In another bowl, mix together the wet ingredients: juice of the lemon, plant milk, almond extract and melted coconut oil. Once mixed, add to the dry ingredients along with the apple pieces. Optionally add the raisins. 
3. Scoop the dough into your muffin cups until 3/4 full and bake for 20 to 25 minutes on 180°C / 356°F. 
4. Once baked, leave to cool (if you can resist the temptation). 

Topping: mix together 2tbsp oats, 1tbsp cane sugar and 1tsp cinnamon. Then top the muffins with the crumble before baking.
