SWEET POTATO MASH PATTIES

Have you ever imagined what it would be like to bite into a patty, and it being sweet potato mash on the inside? Crispy edges and a gooey inside, that's what our patty dreams were made off. Plain salads don't make our hearts beat faster, this salad, however, is something else. Adapt the recipe as you please, whether this is by creating a warm salad or adding more flour to create a firmer patty, just as long as your dreams come true. Need we say more?

BAKING TIME: 20 minutes // SERVINGS: 8 patties // MEAL: LUNCH

INGREDIENTS

- 1 cup white beans, rinsed
- 1 large sweet potato
- 1/4 cup quinoa flour (or regular flour, we kept it gluten-free)
- spices: 1tsp each of paprika, oregano, and cumin
- salt and pepper to taste
- pinch of chili flakes

STEP-BY-STEP

1. Start off by rinsing your sweet potato and use a knife to randomly poke holes in the potato. Microwave (1000W) for 8 minutes until soft. Then cut into two and scoop out the insides.
2. In a blender or food processor, combine the white beans, sweet potato, quinoa flour, the spices and salt, and pepper. Blend until the consistency looks like sweet potato mash.
3. Preheat your oven to 180°C or 356°F and, using your hands, create small patties. Bake for 10 minutes on one side, then flip (this might be tricky as the patties are rather soft), and bake for an additional 10 minutes on the other side. 
4. Leave to cool down and serve alongside a salad or use them as tiny burger patties. 

In the pictured salad, we served the patties alongside some lettuce, cucumber, avocado, carrots, dried cranberries, fresh blueberries, hemp seeds and some hummus.
