GF CRUNCHY ALMOND FLOUR COOKIES

Gluten-free baking can be a bit of a hassle sometimes, let's be honest. We all have that one family member who's vegan and just happens to eat gluten-free too, and you honestly have no clue what to make whenever he / she comes over. Let that be a worry of your past, I've got plenty of recipes for breakfast, lunch and dinner on here. These cookies can be a way of bonding between you and your gluten-free friend or family member. They're sweet, crispy, easy to make and perfect for any occasion. I even like to have one alongside my morning porridge. Quote me on that.

BAKING TIME: 11 minutes // YIELD: 14 cookies // MEAL: snacks

INGREDIENTS

- 1/2 cup almond flour
- 1/2 cup rice flour
- 1tsp baking powder
- 1/2tsp baking soda
- 1tbsp vanilla sugar
- 1/4 cup cane sugar
- 6tbsp oil
- 2tbsp almond milk
- 1tbsp lemon juice

STEP-BY-STEP

1. Preheat your oven to 170°C or 340°F. Combine dry ingredients in a bowl, mix well. Then add wet ingredients and knead until the dough is sticky.
2. Wet your hands and roll little balls, then place them on a baking tray. Gently press the back of a fork onto the little balls so they flatten a little. This should make 14 cookies.
3. Bake 11 minutes until lightly browned. Let the cookies cool down, they will get crispier.
4. Store in an airtight container or consume all of them right away.
