PEANUT BUTTER & CHOC CHIP ICE CREAM CUPS

We remember being totally 'obsessed' when Ben & Jerry's came out with the vegan flavors of their delicious, mouth-watering, stomach-hurting ice cream. We say stomach-hurting because a whole jar of the yumminess did not go down too well. The peanut butter and cookies flavor is to die for, it's true. However, considering we fancied a cheaper and healthier alternative to the dessert, we came up with an equally (if not more) delicious ice cream recipe. It consists of four ingredients only, it's ready in two minutes and it's incredibly healthy.

PREP TIME: 2 minutes // SERVINGS: 1 // MEAL: snacks

INGREDIENTS

- 1,5 frozen bananas, in chunks
- 1tbsp smooth peanut butter
- splash of plant milk (we used oat milk)
- a handful of vegan choc chips
*optional: pinch of salt

STEP-BY-STEP

1. In a sturdy blender, blend together the banana chunks, peanut butter, and plant milk. Once it's looking smooth add in the choc chips and pulse.
2. Pour the ice cream into a cup and chill in the freezer for an hour or so. Enjoy!
