GREEN AVOCADO COUSCOUSSALAD

We're coming at ya with a fresh couscous salad that may look somewhat impressive and restaurant-worthy, but is incredibly easy and fast to create. In case you were looking for a dish to impress your friends then look no further. We're keeping it basic and zesty today with a hint of sweetness from the natural sweetener that was sent to us by the Canadian gods. Only good stuff in this dish, we swear!
PREP TIME: 15 minutes // SERVINGS: 2 // MEAL: DINNER

 

INGREDIENTS

- 1/2 cup dry couscous
- 1 cup finely cubed cucumber
- 1/2 avocado, mashed
- handful fresh basil, chopped
- juice of 1/2 lemon
- 1tbsp pine nuts
- 1tsp maple syrup
- pinch of oregano
- salt and pepper to taste
- optional: 1tbsp raisins

 

STEP-BY-STEP

1. Boil the couscous and let it sit for 3 minutes or until the grain has soaked up all the water. Leave to cool down by allowing it to rest in the fridge for 15 minutes or freeze for 5 minutes if you're short on time.
2. Add in the lemon juice, mashed avocado, fresh basil, pine nuts, maple syrup, oregano, and s&p. Mix well with a spoon.
3. Fill a round cutter with the couscous salad and gently push it down so it remains firm. Add on the thinly sliced cucumber along with a couple slices of avocado. We decorated ours with more pine nuts, shredded almonds, olives and hemp seeds.
