Oh, you were saying something? Sorry, I was distracted by a majestic stack of pancakes. We *totally* get it if this is your excuse from now on. Even better, you can stack these yourself within five minutes as this recipe is so easy it'll blow your mind. We'd say this recipe serves one, but let's face it. Before having devoured these, your family, friends or significant other will have claimed a pancake or two. Double the recipe for a Sunday morning brunch, we dare you.
BAKING TIME: 5 minutes // SERVINGS: makes 6 to 8 pancakes // MEAL: BREAKFAST
INGREDIENTS
- 1/2 cup spelt flour- 1/2 cup almond or soy milk
- 1tsp cinnamon
- 1tbsp lemon juice
- 2tbsp cane sugar (unrefined)
- 1tsp baking powder
- 1tsp baking soda
- 1tsp vanilla sugar or vanilla extract
STEP-BY-STEP
1. In a bowl, mix together the dry ingredients. Combine the plant milk and lemon juice in another bowl, mix and then add to your dry ingredients. Stir well.2. In the meantime, heat up your pancake pan or non-stick pan. Pour half a cup's worth of batter into the pan and bake each pancake for 1 minute on each side.
3. Stack and decorate with soy yogurt and frozen or fresh fruits. Devour.
