Sometimes you wish you had one of those delicious and enormous burgers on your plate, yet you don't feel like going out or breaking your habit of healthy eating. No need to worry, we've got you (and your family) covered with this recipe! When we're talking about a 'mean' burger, we're serious, and we hope you are as well. Let's get transported to Mexico, or your nearest burger eatery (no, we're not talking about McDonald's, do they even serve food?) and get baking!
COOKING TIME: 60 minutes // SERVINGS: 4 // MEAL: DINNER
INGREDIENTS
- 1 large, yellow onion, roughly diced- 1 smaller, purple onion, thinly sliced
- 1 can rinsed black beans
- 2 tbsp BBQ sauce
- spices: 1/4 tsp cayenne pepper, 2 tsp (smoked) paprika, 1 tbsp fajita spice mix
- 2 cups flour
- salt and pepper to taste
We used our friend's bagel recipe to make the burger buns, find it HERE. These do take a long time to make, so get started on these before making the burger patties.
STEP-BY-STEP
1. Cook the onion with the spices on a medium heat until translucent. In the meantime, in a food processor, mix the black beans until they form a sticky dough-like consistency.2. To the food processor, add the cooked onion, the BBQ sauce and 1 cup of flour.
3. Preheat your oven to 180°C or 356°F and start forming the burgers. If the mixture remains too sticky, though this is absolutely normal, add more flour to facilitate the patty-creating.
4. The dough should make four larger-sized burger patties. Lay them out on a baking tray and bake in the oven for 10 minutes, then flip and bake for an additional 5 minutes.
5. In a pan on higher heat, bake the purple onion in a bit of sunflower oil and add the patties. Bake these for about five minutes on high heat whilst prepping the burgers.
BURGER INGREDIENTS (OPTIONAL)
If you wish to make your burgers look as phenomenal as ours, you'll be needing: a salad mix, 1 large tomato (sliced), BBQ sauce, ketchup and mustard.1. Start layering the burger buns with: 1 tsp of mustard, a tomato slice, BBQ sauce, the homemade patties, BBQ sauce and ketchup, the salad mix and another slice of tomato.
2. Serve with oven-baked fries or any side you fancy.
