DOUBLE CHOCOLATE CHIP COOKIES

 I've been really into making my own snacks lately, as it's cheaper, waste-free and somewhat healthier than store-bought cookies. Like all human beings, I like a crunchy cookie with a cup of tea (or coffee, pick your fancy) and these little chocolate biscuits are exactly that. The recipe is easier than you can imagine. Mix all ingredients together, roll little balls, place them on a baking tray and you're good to bake! With little cleaning up to do, you could even make a bunch of these for a birthday party if you're tired of the typical party snack. Whatever you decide to do, make sure to try ten of these yourself before your friends and family do so, as they'll be gone within seconds!

BAKING TIME: 15 minutes // YIELD: 20 cookies // MEAL: snacks

INGREDIENTS

- 1 cup spelt flour
- 1/4 cup cocoa powder
- 1tsp baking powder
- 1/2tsp baking soda
- 1/3 cup oil
- 1/3 cup plant milk
- 1/3 cup chocolate chips

STEP-BY-STEP

1. Preheat your oven to 175°C. Mix together all dry ingredients, then add the oil and plant milk. I used oat milk for this recipe, but any milk would work just fine. Knead the dough, then add in the chocolate chips and knead again.
2. Roll little balls and place them onto a baking tray. Bake 15 minutes, then leave to cool for an additional 15 minutes. The longer you leave them to cool, the crunchier they will get.
3. Store in an airtight container for up to 2 weeks.
