OVEN ROASTED CARROTS WITH MAPLE TAHINI DRESSING

Roasted carrots are something so easy yet so delicious to bring to the dinner table. They're amazing just by themselves with a sprinkle of oil and salt and pepper, but this maple tahini dressing gives it that something extra. You'll be licking off your plate and asking for more once you've had a bite of these. The maple syrup adds more sweetness to the carrots whilst the tahini, or sesame paste, brings in a milder taste (that rhymes!).

We're pretty sure this dish will be served on many more occasions than just on Christmas Eve. Add a squeeze of lemon and you're good to go and impress your friends and family.

BAKING TIME: 35 minutes // SERVINGS: 2 // MEAL: dinner

INGREDIENTS

- 5 carrots
- 4tsp maple syrup
- 1 lemon
- 2tbsp water
- 4tsp tahini


STEP-BY-STEP

1. Preheat your oven to 200°C or 400°F. Thoroughly rinse the carrots and cut into four sticks.
2. In a small bowl, combine the ingredients for the dressing, these are maple syrup, juice of 1/2 lemon, water and tahini. Mix until smooth without chunks.
3. Coat the carrots with 1/2 of the dressing and roast for 25 to 30 minutes. Shake the baking tray every 10 minutes.
4. Thinly slice the lemon. This will be used to garnish the carrots.
5. Once the carrots are roasted, transfer them onto a plate and garnish with the other half of the dressing as well as the lemon slices. Serve hot.
